So naturally, I made some!
Here's what you need:
3 Red Onions - blend
5 cloves of Garlic - blend
1/2 an inch of Ginger -blend
2 inches of Gelangal (lengkuas) - (optional)
1 stalk of Lemongrass
1 bowl of Toasted ground nuts - blend
20 stalks of Dried chilli - blend
less than 1/2 a piece of palm sugar
1 piece of asam keping
Salt to taste (and chicken or beef cube for added taste - optional)
Thinly slice the onions and garlic
Saute the onions and garlic, then when they're almost golden brown, add in the spices...
When you can smell the aroma of the onions and garlic, add in the blended chilli paste...
saute...
Add the blended onions and garlic in...
Grate some palm sugar...
Add to the chili mixture...
Stir and continue cooking till the colour darkens..
Take two stalks of lemongrass and...
Add into the chilli mixture..
Toast the ground nuts in the oven till golden brown...
Blend the way you like it (I like mine fine with a little chunky pieces)
Then add to the mixture...
Leave to cook...
At this point it will look very thick, so you can choose to add water or coconut milk...
And once the whole concoction has been cooked down, you're left with a nice, thick gravy sauce that you can enjoy with your ketupat and lemang! :)
